To ensure the quality of our products and to offer you a taste highlight with our organic products, regular product tests and tastings take place. In addition to our internal sensory panels, the Byodo consumer panel also regularly puts our products through their paces.

We are also very critical when it comes to selecting raw materials. We select partner suppliers and producers very carefully from the outset – and not just from a technical point of view. They must also fit in with us on a personal level and share our love and passion for organic products with the highest standards of enjoyment.

We are sensor technology experts!

Sensor technology is the science of using human sensory organs (eyes, nose, mouth, ears and sense of touch) for testing and measuring purposes. This may sound very dry at first, but on closer inspection it is a very lively topic to which we devote ourselves with dedication. In sensor technology, the focus is on the comprehensive description of products. This ranges from the product's appearance, consistency and mouthfeel to the taste in all its facets. The aim of sensory tests is to formulate all impressions neutrally and to describe a product in as much detail and variety as possible.

The Byodo sensory panels

Our quality assurance experts are also supported in their work by the internal Byodo sensory panels on a regular basis and when difficult issues arise. Our internal panel, a team of ten people who receive sensory training and are interviewed, meets every two weeks. First, everyone tastes for themselves. The results are then discussed and debated in the group – this is the only way the competence team can capture all the sensory nuances of a product and arrive at a common denominator in the description of the test item. The tasters test new recipes, for example, and taste Byodo products at the end of their best-before date or in comparison with competitor products. In addition, the basic flavors are trained again and again and valuable subtleties are worked out in the description.

The entire team is involved in the overall panel. Our DIN-standardized sensory room is frequently used for triangle tests or ranking tests, for example. By means of a triangle test, for example, slight differences between products from different batches or different harvests can be determined. The participating Byodos are presented with three samples, two of which are identical. The tester must determine the deviating sample and describe the deviation as precisely as possible. Sensory tests and professional test methods, such as the triangle test, are also used in the development of new products or in the further development of existing recipes.

Sensory technology in everyday Byodo life

For Dr. Karin Huber, Head of Byodo Quality Assurance, sensory analysis is part of her daily work. Because she and her team ensure that all Byodo products are comprehensively checked. In addition to the analytical examination, they pay particular attention to the impeccable taste of our 100% organic products. Each batch is carefully checked upon receipt.

When the young top chefs of the Jeunes Restaurateurs (JRE) meet their favorite suppliers, the result is pure enjoyment! We are a proud member of the JRE-Origins network, which was founded in 2016, thanks to the recommendation of our partner, star chef Alexander Huber. The aim of the network is to bring the best suppliers together with the best chefs.
