A really good tomato sauce doesn’t need many ingredients. Ripe tomatoes, a little salt, perhaps a hint of herbs – and: high-quality extra virgin olive oil.

In Italy, this is a matter of course. Hardly anyone there would prepare a tomato sauce without olive oil. It is not just an ingredient, but a culinary foundation. But why is that?

From the simple “Salsa di Pomodoro” to the aromatic “Arrabbiata”: olive oil forms the basis of almost every sauce in Italian cuisine. It is either gently heated with the tomatoes or added raw at the end.

Tomatoes contain lycopene, a natural plant substance that gives them their bright red color. This substance is special because it is fat-soluble.

This means quite simply:
Without fat, your body can only absorb lycopene with difficulty.

Only when you add a little oil does the lycopene become properly available for your body. The oil acts like a “means of transportation”. It helps to release the valuable ingredients from the tomato and make them usable.
