Currently, no genetically modified raw materials are used in organic products and therefore in all Byodo products.
Questions about organic quality
All our products comply with the requirements of EU Organic Regulation 2018/848 and are labeled with the EU organic logo.
In addition, all our products bear the German organic seal.
The organic seal guarantees that our products have been produced according to the guidelines of organic farming, in accordance with EU Organic Regulation 2018/848.
The products are registered with the BLE (Federal Agency for Agriculture and Food).
Our organic products comply with the EU Organic Regulation 2018/848 and we also adhere to the orientation and guideline values of the BNN (Bund Naturkost und Naturwaren).
Byodo only uses 4 of 52 approved organic additives.

Questions about vinegar
Only vinegars from the Modena region are allowed to use this product name.
Both production and bottling take place in the center of the Italian art of balsamic vinegar: the region around Modena.
You can recognize this balsamic vinegar in the Byodo range by the protected geographical indication mark or the IGP (Indicazione Geografica Protetta) claim.
Due to the natural production process, our vinegar still contains acetic acid bacteria.
These are still active under favorable conditions (plenty of light, heat) and can form streaks or cloud the vinegar.
These so-called “vinegar nuts” do not represent a loss of quality, but are rather a sign of the naturalness of the vinegar.

Our Aceto Balsamico di Modena and Condimento Bianco mature for up to six months. The Aceto Balsamico di Modena IGP – Invecchiato matures for three years in old oak barrels and our Apple Balsamic vinegar matures for two years. The other balsamic vinegars are “fresh” vinegars that are only stored for a short time after fermentation.
All vinegars and balsamic vinegars have a certain amount of residual alcohol.
The legal limit for balsamic vinegar is <1.5% and for vinegar <0.5% alcohol.
Questions about oil
The term “virgin” refers to natural oils from the first pressing, which are pressed cold and without any addition of heat to prevent oxidation. In addition, the seeds are regularly checked for undesirable residues. The oil is only filtered, which is why the ingredients are retained and are therefore valuable for our organism.
You will find the country code of the respective country of origin on each label next to the batch and the best-before date (BBD).
“Extra virgin” refers to olive oils of the highest quality: cold-pressed, mechanically pressed and without the addition of external heat. The proportion of free fatty acids must be below 0.8% and the temperature must not exceed 27°C throughout the entire production process.
We recommend a dark and cool place – a kitchen cupboard is ideal.
After opening, linseed oil and walnut kernel oil should always be stored in the refrigerator.
As a rule, cold-pressed oils can be kept for several months. Oils with a high proportion of polyunsaturated fatty acids, such as linseed oil, should be used within a few weeks.
For the best possible preservation of valuable ingredients and the fine taste of the oils, the can is the best possible packaging, also taking the environment into account.
The Byo-Protect process is a 3-phase process that filters heat-sensitive plant substances out of the oil as gently and naturally as possible, making it highly heatable.
In the Byo-Protect process, the oil is first filtered gently and purely mechanically so that coarse components are removed.
Natural clay minerals then bind other plant substances. Finally, gently applied steam “blows” the last fine particles out of the oil.
This makes Byodo’s organic frying oils highly heatable and particularly mild in taste.
Questions about spicy delicacies
We recommend that you only ever remove the mayonnaise with absolutely clean cutlery, store the opened jars in the fridge and consume them within a few days.
Byodo may onnaise is not vacuum-capped and therefore does not need to be plopped. Filling under vacuum is not necessary as the eggs used are pasteurized and the mayonnaise is microbially stable due to the pH value.
Brandy vinegar is indispensable for the production of our mustard due to its neutral taste. Byodo mustards impress with their excellent character – this is based on the natural pungency of the mustard seeds and the selected ingredients. A strong taste of the various vinegars would change the mustard too much.
Sugar makes the taste rounder and more stable. The use of white or light-colored sugar is also essential to guarantee the flavor stability of these mustard varieties throughout their entire shelf life. If whole cane sugar were used, this stability would not be sufficiently guaranteed due to the high molasses content.
Cane sugar from controlled organic cultivation is used. This usually comes from Brazil.
The following varieties are more tart and are not sweetened: classic medium-hot mustard, grainy mustard, horseradish mustard, Dijon mustard and hot mustard.
Opened jars of mustard should always be stored in the refrigerator. If some oily liquid forms on the surface, this can be stirred back in without any loss of quality. This is syneresis – a completely natural process.
Byodo Premium Organic Sea Salt comes from a biosphere reserve on the Spanish Atlantic coast. Our salt is extracted from pure seawater and is therefore of particularly high quality. The natural evaporation of the seawater in the salt pans with the help of the sun and wind creates a salt crust. This is carefully harvested, washed, sieved and gently cleaned using photosensors.

Only whole grain rice from Italy is puffed for Byodo rice cakes.
Should this not meet our strict quality criteria, we would have to switch to other countries of cultivation in the EU.
Questions about the CateringLine
Yeast extract makes the vegetable stock spicier and more full-bodied. It gives it a hearty taste and provides the “mmmh” effect.
Until the end of 2013, yeast & yeast extract were not considered products of agricultural origin and were allowed to be used in organic food. From 2014, the EU Organic Regulation changed: yeast & yeast products now count as ingredients of agricultural origin. If a product is to be labeled as “organic”, the yeast must also be organic.

For even more flavor in the vegetable stock, we recommend protein-rich vegetables that you can simply cook with it:
- Peas or pea pods
- Mushrooms especially shiitake mushrooms
- Leftover Parmesan cheese or the rind, or other cheese

Questions about the company
The Byodo company was founded in 1985.
Byodo does not have its own production facility in Mühldorf. However, the cooperation and long-standing partnership with suppliers, manufacturers and farming cooperatives is almost equivalent to having our own production facilities. Many partners have been with Byodo since the company was founded. The brand has grown together with them.
Recipes are developed in close cooperation and the taste of the organic delicatessen products is constantly optimized – product development is therefore Byodo’s responsibility.
Quality standards and quality assurance are worked on together with the suppliers – quality management is also subject to Byodo’s supervision and responsibility.
The availability of raw materials is also ensured through close cooperation with suppliers and the constant development of cooperatives. Byodo also provides the raw materials for many productions itself and thus ensures the desired quality and availability of the raw materials – the procurement of raw materials is therefore also the direct responsibility of Byodo.
You can find our products made from 100% organic ingredients exclusively in specialist organic food stores and in our online store. Also in the Byodo Genusswelt in our Feinsinn – Bioladen & Genussküche at the Byodo site in Mühldorf am Inn.
The company building is equipped with sustainable, environmentally friendly technology, for example with a groundwater pump, a ventilation system, a heat-storing conservatory and photovoltaic systems. There is no use of fossil fuels at all. For the building, Byodo received the “Umwelttaler” award from the Bund Naturschutz in Bayern e. V.

We ensure the outstanding quality of our products through numerous voluntary commitments and double quality assurance.
Thanks to our membership of the BNN (Bundesverband Naturkost Naturwaren), we are also subject to even stricter guidelines than those for EU organic certification.
