    Information on production

    10.000 kg of freshly ground durum wheat or durum wholemeal wheat are mixed together with 3.000 l of fresh spring water. According to size and shape the mixture is then pressed through the designated die plates. Byodo Pasta is dried at temperatures between 70 - 80 °C. This slow but constant process of drying guarantees a beautiful noodle shape without any rips and cuts.

    Spaghettini in lemon-cream sauce

    Take ...

    • 200 g Byodo Pasta Superiore Spaghettini, semolina
    • 1 big lemon
    • 200 g whipped cream
    • 2 tsp granular vegetable stock
    • Byodo Atlantic Sea Salt, fine
    • freshly ground pepper
    • 2 yolks
    • fresh basil

    Preparation:

    Boil spaghettini in sufficient amount of saltwater until al dente and leave to drain. Rinse lemon with hot water, dry, squezze and finely grate half of lemon peel. Slowly boil up cream at low heat and gradually add lemon juice. Season cream with granular stock, salt and pepper. Stir in yolks and remove sauce from oven. Then mix in copped basil.Serve with drained pasta.
