Lasagne Bolognese is a typical speciality from Bologna. Therefore lasagne layers are alternately stacked in-between ragout, bechamel sauce and Parmesan cheese and finally scalloped.

The organic Byodo Lasagne, semolina does not have to be pre-cooked - a sufficient amount of fluid is enough to cook the noodles firm to the bite.

    Information on production

    10.000 kg of freshly ground durum wheat or durum wholemeal wheat are mixed together with 3.000 l of fresh spring water. According to size and shape the mixture is then pressed through the designated die plates. Byodo Pasta is dried at temperatures between 70 - 80 °C. This slow but constant process of drying guarantees a beautiful noodle shape without any rips and cuts.

    Ingredients:

    • 250 g Byodo Pasta Superiore Lasagne, semolina (=12-13 layers)
    • 100 g grated Parmesan

    Ragout-sauce:

    Béchamel sauce:

    Preparation:

    For ragout: Slighlty brown onions and garlic in olive oil. Add minced meat and brown for few minutes. Then add peeled tomatoes, white wine and soup cube. Season with salt and pepper. Stir and simmer for 30 minutes at low temperature. Then remove from oven and add a pinch oregano and stir again.

    For béchamel sauce: Melt butter and add flour by the spoonful. Slowly add milk while constantly stirring. Leave to simmer while constantly stirring at low temperature, until it becomes smooth sauce. Season to taste with salt and pepper. Watch out, the sauce should not become too thick.

    For lasagne: First grease oven-proof dish and fill in béchamel-sauce. Then put in layer of uncooked lasagne pasta, followed by a layer of ragout and top with béchamel-sauce. Repeat this 4 times in a row alternately layering pasta and sauce. Top the last pasta layer with sufficient amount of both sauces. Sprinkle with cheese and some flakes of butter. Finally bake in oven at 180 °C for approx. 40 minutes.
