    Information on production

    10.000 kg of freshly ground durum wheat or durum wholemeal wheat are mixed together with 3.000 l of fresh spring water. According to size and shape the mixture is then pressed through the designated die plates. Byodo Pasta is dried at temperatures between 70 - 80 °C. This slow but constant process of drying guarantees a beautiful noodle shape without any rips and cuts.

    Nut and Pasta Salad

    Take ...

    (2 portions)

    • 200 g Byodo Farfalle, semola
    • 3 tbsp whole walnuts
    • 2 tbsp pine kernels
    • 2 tbsp whole hazelnuts
    • 4 tbsp lemon juice
    • 2 tsp maple syrup (or honey)
    • 4 tbsp Byodo Olive Oil, extra virgin - fruity
    • 2 tbsp Byodo Walnut, Hazelnut or Almond Oil
    • Salt & pepper
    • 3 spring onions
    • 4 stems of flat-leaf parsley
    • Cress (as preferred)

    Preparation:

    Cook the pasta in plenty of salted water as per the instructions. Chop the walnuts and hazelnuts before toasting them in a pan together with the pine kernels without using any oil. Mix together the lemon juice, salt, pepper and maple syrup. Beat in the olive and walnut (or other nut) oil gradually. Cut spring onions into fine rings. Chop the parsley leaves finely. Drain the pasta well and combine with the lemon sauce. Add the nuts, herbs and spring onions, season additionally if necessary. Garnish with a drizzle of nut oil and the cress.
