This big tubular organic noodle can be stuffed with all kind of tasty ingredients and is normally baked in the oven with a enough fluid and cheese.

    Information on production

    10.000 kg of freshly ground durum wheat or durum wholemeal wheat are mixed together with 3.000 l of fresh spring water. According to size and shape the mixture is then pressed through the designated die plates. Byodo Pasta is dried at temperatures between 70 - 80 °C. This slow but constant process of drying guarantees a beautiful noodle shape without any rips and cuts.

    Cannelloni stuffed with salmon

    Ingredients:

    • 2 packs Byodo Pasta Superiore Cannelloni, semolina - each 250 g

    Stuffing:

    • 400 g salmon filet
    • ½ lemon
    • 1 fennel bulb
    • 1 clove garlic
    • 4 tbsp Byodo Frying Oil Olive
    • 1 cup créme fraîche (150g)
    • 2 tbsp freshly grated cheese (e.g. Pecorino)
    • 1 bunch basil

    Béchamel sauce:

    Preparation:

    Béchamel sauce: melt butter and add flour by the spoonful. Slowly add milk while constantly stirring. Leave to simmer while constantly stirring at a low temperature, until it becomes smooth sauce. Season to taste with salt and pepper. Watch out, the sauce should not become too thick.

    Stuffing: rinse salmon filets, dab dry and cut into strips. Sprinkle with lemon juice. Cut cleaned fennel into strips. Fry garlic and fennel in hot fat for 10 minutes. Fold in créme fraîche and cheese and bring to the boil. Season to taste with salt and pepper. Then add salmon and basil strips. Brush oven-proof dish with béchamel sauce. Use teaspoon to fill Cannelloni with stuffing. Put Cannelloni in greased dish. Top with remaining béchamel sauce and put dish in oven.Bake for approx. 30 minutes at 175 °C.
