The organic Byodo Wholemeal Lasagne, integrale does not need to be pre-boiled, a sufficient amount of fluid is enough to cook the pasta "al dente".

    Information on production

    10.000 kg of freshly ground durum wheat or durum wholemeal wheat are mixed together with 3.000 l of water. According to size and shape the mixture is then pressed through the designated die plates. The ideal material for the die plates is bronze. Bronze roughens up the noodle surface and therefore makes sure that the noodles can soak up the sauce after cooking. Byodo Pasta is dried at temperatures between 70 - 80 °C. This slow but constant process of drying guarantees a beautiful noodle shape without any rips and cuts.

    Broccoli-lasagne-wholemeal with rosemary tomatoes

    Preparation:

    Melt butter in pand and lightly sautée 1 tbsp rosemary and flour. First pour in vegetable stock then milk while constantly stirring and bring to the boil for 10 minutes at medium temperature (uncovered). Season with salt and pepper and  pressed garlic. Finely grate cheese, divide broccoli into small flowerets and boil for 3 minutes in saltwater then drain. Brush an oven-proof dish with olive oil and put in 3 tbsp of sauce. Succesively put lasagne layers, ¾ of broccoli and ¾ of sauce in dish. Sprinkle cheese in-between the layers. Cover top with remaining broccoli and sauce. Bake lasagne in pre-heated oven at 180 °C for 15 minutes. Meanwhile peel and halve tomatoes. Dredge tomatoes in remaining rosemary and oil, season with salt and pepper. Spread on lasagne and bake for further 15 minutes. Leave lasagne to rest for 10 minutes before serving.
