The original from Italy can be identified by the sign for protected origin: I.G.P. The special mixture-ratio of red wine vinegar and concentrated grape must is responsible for the particularly balanced harmonic taste of the Byodo organic balsamic vinegar. Its exclusively produced in the North Italian province of Modena.

    Information on production

    Byodo organic vinegars are basically made from alcohol, which means - depending on the sort - red wine, raspberry wine, grain spirit etc. For this purpose the alcohol is filled into big fermentation tanks, where it is slowly fermented to alcohol by means of vinegar bacteria and oxygenation. This procedure takes place at pleasant temperatures around 25 °C. Experts call this a continuous process. Byodo vinegars are not heated in order to retain valuable enzymes and flavouring agents. The raw materials are 100 % organically grown.

    Tomato Dressing with Aceto Balsamico di Modena IGP

    Preparation:

    Start by finely chopping the basil. Next, stir in the vinegar with a little salt, pepper, sugar and tomato puree. Next, finely chop the clove of garlic and rub in with a little salt. Stir it all into the dressing and slowly add the olive oil. Finally, garnish with basil and enjoy.

    Our tip:

    This dressing goes especially well with tomatoes but is also great with all mixed salads, pepper, aubergines, courgette and fennel.
