Did you know...?

  • When can a noodle be called "al dente"? If you can still notice a tiny white spot in the centre, after biting the noodle. It will only be seconds till the pasta is finished. This is usually shortly before cooking time ends.
  • The secret of our pasta quality is the interaction between different sorts of durum wheat, springfresh water as well as the use of bronze die plates and a slow drying process.
  • 10.000 kg of freshly ground durum wheat or durum wholemeal wheat are mixed together with 3.000 l of water. According to size and shape the mixture is then pressed through the designated die plates. The ideal material for the die plates is bronze. Bronze roughens up the noodle surface and therefore makes sure that the noodles can soak up the sauce after cooking.
