Mix together Balsamico D`ORO, water and agar agar. Let it set in the fridge then dice finely. Mix tomato dices, onions, mozzarella and olive oil and season with salt and pepper. Soak Nori leaves in water, cover with rocket salad leaves and tomato salad and roll to pointed shape. Stir salad cream, wasabi and lemon balsamic vinegar. Arrange plates with 2 leaf rolls each and garnish with wasabi-mayonnaise and balsamic vinegar dices.
