Lamb’s lettuce with almond oil (4 portions)

Ingredients pumkin marinade
Preparation

Stir dressing from balsamic vinegar, salt, pepper, shallots and sugar. Slowly add almond oil. Cut baguette lengthwise into fine slices. Brush with olive oil wrap round metal vessel and bake for approx. 10 min at 180 °C.

Boil all ingredients for pumpkin marinade, add pumpkin so everything is covered. Re-boil and leave to simmer for 5 min. Season with salt and leave to cool in marinade.

Dress salad and fill baguette crouton coating and garnish with pumpkin pieces.
