Caesar salad in parmesan basket (4 portions)


Wash, clean and dry lettuce in salad spinner and put aside. Mix together garlic, salt, pepper, sugar, anchovy paste, balsamic vinegar, mustard, lemon juice and 2 tbsp Parmesan. Leave to steep for 30 minutes then slowly stir in oil.

Grate Parmesan and thinly sprinkle on baking plate (approx. 5x30cm), bake at 180 °C for approx. 6 minutes until golden-brown. Immediately remove from baking plate and form a basket.

Fry bacon strips and croutons in pan until golden-brown. Cut radishes into fine slices. Shortly before serving, cut salad into thin strips and mix with dressing, garnish with croutons, radishes and perhaps bacon strips.
