Pasta Medals fried in lemon butter (4 portions)

Slightly sweeten 600 ml water with sugar and boil. Cover square baking dish with plastic foil. Boil noodles until "al-dente", pour off water and noodles in baking dish while still hot. Cover with foil weight down with weight and leave to cool in fridge. Cut out medals with pastry ring.

Heat butter in pan. Add 2 tbsp sugar, vanilla and zest. Fry medals from both sides until golden-brown. Cut out panna cotta with hot table spoon, arrange on plates, add warm pasta medals and macadamia nuts and perhaps maple syrup.
