Belgian waffles

Crispy Belgian waffles with raspberries and blackcurrant crema

Ingredients
  • 80 g soft butter
  • 70 g sugar
  • 1 sachet vanilla-infused sugar
  • 2 eggs
  • 170 g wheat flour
  • ¼ tsp baking powder
  • 170 ml milk
  • 80 ml sparkling water
  • 1 pinch salt

 

 

Method

 

Cream the butter, sugar and vanilla-infused sugar. Separate the eggs and stir the yolks into the mixture. Mix the flour and baking powder. Stir the milk and flour into the mixture gradually. Add sparkling water and stir. Beat the egg whites with a pinch of salt until firm. Fold the beaten egg whites into the waffle batter. Stir again. Spray the waffle iron with baking spray and bake small waffles.

At the same time, select the raspberries and whip the cream. Sweeten the cream with sugar to taste.

Top the waffles with cream and raspberries just before serving and drizzle with blackcurrant crema.
