Blueberry pancakes

Blueberry pancakes with blackcurrant crema

  • 300 g wheat flour
  • 4 eggs
  • 200 g buttermilk
  • 100 ml milk
  • 50 g soft butter
  • 70 g sugar
  • 20 g baking powder
  • 1 sachet vanilla sugar
  • 1 pinch salt
  • 250 g blueberries
  • Byodo Crema with Black Currant
  • Icing sugar to dust
  • Byodo Frying Oil Sunflower for brushing pan 

Mix flour and baking powder. Add the remaining ingredients and mix into a smooth batter. Allow the batter to rest for 15 minutes.

In the meantime, select and wash the blueberries. Add two thirds of the berries to the batter.

Brush a coated frying pan with a little oil and bake 16 pancakes one after another. The pancakes can be kept warm in the oven until all are ready.

Stack 4 pancakes on each plate. Garnish with the remaining blueberries and dust with icing sugar. Finally, pour the blackcurrant crema over the pancakes. Serve and enjoy!
